Easy Olive Bread- Cornelia
>1 Boboli bread >slivered almonds >Brie >a little olive oil and garlic > >Spread olive oil and garlic over the Boboli bread >Place thin slices of Brie all over the bread >Sprinkle slivered almonds over that >Bake at 375 for ten minutes or until cheese softens and gets a little runny >Cut into small squares but don't separate from the round of bread. >Voila
Brushetta with Tomatoes and Basil- Suzy
Ingredients: 2 medium garlic cloves, minced * Pinch of salt ¼ cup of olive oil ¾ cup chopped plum tomatoes 1/3 cup finely chopped basil 4 thick slices of Italian, French, or sourdough bread In a medium bowl, mash the garlic and salt together with the back of a spoon or a pestle. Stir in the olive oil, tomatoes, and basil. Cut the bread into slices ½ inch thick. Toast them in the broiler or on top of a grill. Spoon the olive oil and tomatoes mixture over the bread and serve. Brushcetta goes well with soup and a simple salad, or serve it with roasted vegetables. (Making tomato mixture an hour or two in advance allows flavors to marinate.) (*if you are a garlic lover, feel free to add more)
